New, modern Malt Smoking unit at Strzegom Malthouse in Poland is now up and running. Smoking is done for kilned pale malts, for all types of malted grains: barley, wheat and rye. We can produce several different types of smoked malts in the unit by changing the grain and source of smoke. Peat and several types of wood chips are used to produce the wanted smoke flavor.
“We have tried many wood qualities and results have been exciting. Cherry, Peach and Pear woods have been already found popular among brewers and there are many more to come. Smoke from woods provide nice tar like flavor and smooth smokiness into malts” says Quality Manager Marzena Zmijewska.
Phenol levels up to 10 ppm are enough to introduce smoky flavor to different types of beers. Smoked malts can principally be used for many types of beers and whiskies. Due the gentle smoking process, Viking Smoked Malts are still enzymatically active.

Due the opening of our new smokery at Strzegom also the Lightly Peated Malt production, done previously at Lahti malthouse, is from now on produced at Viking Malt Strzegom Malthouse in Poland.
